Milano, table nine!
This was taken inside Seta, the Michelin-starred restaurant at the Mandarin Oriental Milano. I was doing a little work with them and spent a lunch service inside the fabulous kitchen. I grew up with a professionally trained chef for a father; I love to be inside a professional kitchen- especially one as elegant as Seta. These two plates were receiving their final panache from the chef at the pass as service waited to take them away. When I was little, when dinner was ready, my father used to shout “Table Nine!” in his chef’s voice. It was never table ten, or eleven, or even five, or eight. Always table nine. So whenever I’m at a pass in a professional kitchen, I hear my father’s voice: “table nine!” I kept this to myself though, so as not to confuse the waiters.
